Has anyone noticed any potential “unusual” catalysts for the formation of nitrosamines?
Literature talks about phenols and aldehydes (especially formaldehyde) as being potential catalysts in the formation, but has anyone found anything else in terms of functional groups?

No, not in the true sense of a catalyst for nitrosation and beyond published literature examples.
Often the published examples are not a match pH-wise as well.
Still quite some ingredients for which impacts are not fully understood though in my opinion (but this goes broader than true catalyst effects).
On the true catalyzing effect of activated carbon as discussed in literature, I’m sometimes a little bit critical considering nitric acid prewashes of some sources.
